Salon & Delamotte

Cuvee Salon was created by Eugène-Aimé Salon in early 20th century as a libation for friends to consume. Only one wine is made, a vintage blanc de blanc, from only the stand-out years. Fruit comes from grand cru vineyards and parcels in Le Mesnil-Sur-Oger, and the wines are cellared for an average of 10 years to ensure elegance and complexity. The wine is defined by an extremely fine-mousse and flawless chardonnay minerality. Sibling house Delamotte brings the same precision in an approachable manner.

Egly-Ouriet

Egly-Ouriet is a small producer working with low-yielding, completely organic and biodynamic vineyards. Francis Egly’s style is fundamentally opposed to the traditions of the region where major houses pick early, dose high and blend to reach the same spot. His approach steeps premium artisan Champagne against the grain of large style commerciality. Minimal intervention in a place where interventional practices have always been the norm. The resulting wines have tremendous length, texture and finesse.

Anselme Selosse was initially seen as a mad man, yet his focus on natural winemaking and fruit quality has led him to be inspirational and a modern-day prophet of Champagne. The first time I tasted Clemens Busch Riesling I was blown away by the marriage between raw power and the subtle finesse. The wines have a tremendous length in minerality and a distinct sense of terroir. Family owned, small production, committed to gentle treatment, sustainable practices and biodynamics, anti-commercial and simply stunning. Wines are bottled based on the different parcels of slate within their Marienburg vineyard, and the results are benchmark examples of dry Mosel Riesling.

Emmerich Knoll (pronounced with a K) is an ethereal producer of Austrian wine. His Gruner Veltliner once beat a line-up of Grand Cru white Burgundy, cementing a place in the hierarchy of revered wine. Exemplified by length of minerality, vegetal notes and a rich mouth-filling palate weight, the world of Austrian Gruner is a quest generously rewarded to those who seek it. When he was a newcomer on the scene, Patrick Piuze struggled to buy both fruit, and had to push against the grain to achieve the position in Burgundy he now holds – one of prestige and recognition. Amongst many bottlings, he is known for individual terroirs from the same classification, marrying geographic versatility with winemaking fortitude, and the resulting wines are intense. His purpose is to continually define terroir, and his wines are some of the greatest and distinctive Chablis available.

It is well known that Madame Lalou Bize-Leroy sits at the helm of some of the greatest domaines in Burgundy. Initially a négociant for the Maison Leroy family, and with experience at Domaine de la Romanée-Conti on her resume, the purchase of Domaine Charles Noëllat in Vosne-Romanée in 1988 allowed her to begin her own Domaine. Domaine Denis Bachelet

Domaine Denis Bachelet is a small producer of Gevrey Chambertin, sometimes called the King of Charmes-Chambertin. His tiny parcel sits side by side with Dugat-Py, Roty, Raphet and Perrot-Minot, and in his words is the best part of Charmes-Chambertin. “La finesse avant tout” – finesse before all things. Most of the work is done in the vineyard, and the wines are then made with minimal new oak, un-fined and unfiltered, producing a rustic yet delicate style, altering the natural hue of the grapes as little as possible.

Raul Perez is considered one of the world’s most visionary winemakers. Clonakilla

When John Kirk first planted his vines in Murrumbateman around Canberra in New South Wales during the early 70’s, it took some time before his cool climate Shiraz became widely accepted into the market as a quality contender. For me, drinking a bottle of the 2002 vintage in late 2009 marked one of my most memorable moments with Australian shiraz. Australia’s most renowned grape – while often shining brightly from South Australia – need not originate there to reach International potential. The Shiraz-Viognier from Australia Capital Territory’s Clonakilla is now one of Australia’s most revered red wines, and rightly so.

Jim Barry

Jim Barry envisioned a premium table wine at a time when no Australian wines were valued this high. Whilst famous wines such as ‘Penfolds Grange’ and ‘Henschke Hill of Grace’ now command a high commercial value, Barry’s The Armagh came from a little-known vineyard in the Clare Valley, a region not coined for high-end table reds. His perseverance prevailed, the Armagh is now considered part of the tapestry of Australian shiraz. Today, Sam and Peter Barry continue the family’s reputation for Clare Valley quality across many varietals, especially with Riesling. The Armagh is best with age, allowing the ripe juicy fruit and lengthy tannins to integrate with hearty structure and oak influence.

Domaine A

Peter and Ruth Althaus were cult stars of Bordeaux-style wines in Australia for 30 years. The Jurassic soils in their Stoney vineyard, and the cool climate and low rainfall of Coal River Valley Tasmania, allowed them to produce sophisticated and ‘old world’ wines that stand out in a league of their own. Coal River Valley’s oldest vineyard continues to produce some of Australia’s finest wine, the Merlot has been a favourite of mine for many years, it is an outstanding example of what this grape can do when it’s handled well. One of the best Australian Merlots out there. The good team at Moorilla have now taken over the Domaine, as Peter and Ruth have retired.

Barrel-aged Cocktails

Since cocktails left their disco-era style to the 1990s and grew up into the sophisticated drinks we know and love, there has been a resurgence towards the art of aging cocktails – premixing components, then resting and marrying them for periods of time to add depth, subtlety & complexity to our favourite cocktails before serving them.

 

The practice of holding spirits, wine and beer in casks has been going on for centuries, and it has evolved from the necessity of storage into practically a science – we have a good understanding of what oak adds to a liquid, what it removes and the process that take place in the cask.

 

But there is still an element of something magical going on, and a certain amount of faith in this black art is required – it’s not called the “angel’s share” for nothing. What we mean to say is that aging in cask can have results that range from the inexplicably wonderful to the bafflingly substandard. It is this potential for the sublime – or the ridiculous – that is fascinating, and is why bartenders enjoy experimenting with barrel-aged drinks.

 

Barrels come in all sorts of sizes, types and ages. New oak casks will work quicker to impart flavour, whereas casks on their second or third fills will naturally have a decreased effect. You can acquire casks that have previously held other liquids – sherry, wine and bourbon to name a few. You can also choose between differing char and toasting levels. The size of the cask affects the surface area to liquid ratio, with smaller casks working much faster than larger ones. It is important to recognise that all of these factors, as well as time will have distinct consequences on the drink that comes out of the barrel.
